Ingredients:
– 1 pork knuckle (about 1 kg)
– 100g rock sugar
– 100ml Shaoxing wine
– 100ml soy sauce
– 50ml dark soy sauce
– 5 slices of ginger
– 2 green onions, cut into sections
– 2 star anise
– 1 cinnamon stick
– 1 dried tangerine peel
Instructions:
1. Blanch the pork knuckle in boiling water for 5 minutes, then remove and rinse with cold water.
2. Heat up a wok or pot and add the rock sugar. Melt the sugar until it turns brown and caramelizes.
3. Add the pork knuckle and stir-fry until it is evenly coated with the caramelized sugar.
4. Add the Shaoxing wine, soy sauce, dark soy sauce, ginger, green onions, star anise, cinnamon stick, and dried tangerine peel. Stir well.
5. Add enough water to cover the pork knuckle. Bring to a boil, then reduce the heat and simmer for about 2 hours, or until the pork knuckle is tender.
6. Remove the pork knuckle from the pot and let it cool. Cut it into bite-sized pieces and serve.
