Ingredients:

– 1 pound beef brisket

– 1 onion, chopped

– 1 inch ginger, sliced

– 2 cloves garlic, minced

– 1 tablespoon vegetable oil

– 1 tablespoon soy sauce

– 1 tablespoon Shaoxing wine

– 1 teaspoon salt

– 1 teaspoon sugar

– 1 teaspoon Sichuan peppercorns

– 1 teaspoon cumin seeds

– 1 teaspoon chili flakes

– 8 cups water

– 1 pound Chinese wheat noodles

– 1/2 cup chopped scallions

– 1/2 cup chopped cilantro

Instructions:

1. In a large pot, add the beef brisket, onion, ginger, garlic, vegetable oil, soy sauce, Shaoxing wine, salt, sugar, Sichuan peppercorns, cumin seeds, chili flakes, and water. Bring to a boil and then reduce heat to low. Simmer for 2-3 hours, or until the beef is tender.

2. Remove the beef from the pot and let it cool. Slice the beef thinly and set aside.

3. Cook the Chinese wheat noodles according to package instructions.

4. To serve, divide the noodles among four bowls. Top with the sliced beef, chopped scallions, and chopped cilantro. Ladle the hot broth over the top and serve immediately.
