Ingredients:

Instructions:

1. Cut the pork tenderloin into thin shreds, and marinate with cooking wine, soy sauce, sugar, and cornstarch for 10 minutes.

2. Cut the green pepper, red pepper, and carrot into thin shreds. Mince the garlic and ginger. Cut the scallions into small pieces.

3. Mix the soy sauce, sugar, vinegar, cornstarch, and water in a small bowl to make the sauce.

4. Heat the oil in a wok over high heat. Stir-fry the pork until it turns white, and then remove from the wok.

5. Add the garlic, ginger, and scallions to the wok, and stir-fry until fragrant.

6. Add the green pepper, red pepper, and carrot to the wok, and stir-fry for 1-2 minutes.

7. Add the pork back to the wok, and stir-fry for another minute.

8. Pour the sauce into the wok, and stir-fry until the sauce thickens and coats the ingredients evenly.

9. Add salt to taste, and stir-fry for another 30 seconds.

10. Serve hot with steamed rice.
