Ingredients:
– 2 medium-sized potatoes
– 1 tablespoon vinegar
– 1 tablespoon soy sauce
– 1 teaspoon sugar
– 1/4 teaspoon salt
– 2 tablespoons oil
– 1/2 teaspoon minced garlic (optional)
Instructions:
1. Peel the potatoes and cut them into thin shreds.
2. Soak the potato shreds in cold water for 10 minutes to remove excess starch. Drain and pat dry with a paper towel.
3. In a small bowl, mix together the vinegar, soy sauce, sugar, and salt.
4. Heat the oil in a wok or frying pan over high heat. Add the minced garlic (if using) and stir-fry for a few seconds until fragrant.
5. Add the potato shreds and stir-fry for 2-3 minutes until they are slightly softened.
6. Pour in the vinegar mixture and continue to stir-fry for another 1-2 minutes until the potatoes are fully cooked and coated in the sauce.
7. Serve hot as a side dish.
